Beetroot, or beets (Beta vulgaris), is a root vegetable known for its deep red or purple color, though golden and white varieties exist. It's packed with nutrients like folate, manganese, and potassium, and contains betalains, antioxidants that may reduce inflammation and protect against oxidative stress. Beets are also high in nitrates, which can improve blood flow, lower blood pressure, and enhance exercise performance.
You can eat beetroot raw, roasted, boiled, pickled, or juiced. It's popular in salads, soups (like borscht), or as a side dish. The leaves are edible too, similar to spinach. However, beets are high in oxalates, which may contribute to kidney stones in susceptible people, so moderation is key if you're prone to them.
